So it’s T-2 weeks and Mom is here…AWESOMENESS! Moms are the best and I can’t wait to be one. So looking forward to the big day. So many thoughts go through my mind every minute. Who will he look like? how much hair will he have on his head? will his toes be like mine? The last thing I think about is labor, no idea why…Somehow I just don’t think about that moment while I will be laying down on the bed pushing. Just doesn’t worry me a bit.
Anyways, back to Mom. She’s been cooking me all three meals and spoiling me. All of these meals are authentic Indian (Gujarati) meals that are suppose to help me. Most veggie curry include, cauliflower, eggplant, carrots, broccoli, beans, etc. And, all of these are accompanied by delicious wheat bread (Roti).
Livingsocial had a coupon for Salad Creation in Exton, PA that I ended up buying. Mehul and I went yesterday to try it out for lunch. I had Spring Strawberry salad and he tried their Greek salad with chickpeas. They were both delicious. The place is owned/run by a lady and her daughter. It’s very friendly. We really had a good experience. The unique feature we found was that they serve the salad in the bowls they make the salads in – this saves extra box/plate and keeps the salad cold in the steel mixing bowl. Way to go Green!

Since I found out that I need to be on a low card/low sugar diet in my pregnancy, it’s been real tough. I eat a lot of bread being a vegetarian and all, so reading the label to find out how much carb and sugar each slice of bread has SHOCKED me. I never knew!
When I make the veggie burger at home now, I use two patties of the veggie burger and use only two slice of bread. Today, I used slice of bread, veggie patty (Garden Burger, chipotle flavor), two slices of tomatoes, onions, ketchup, mustard, slices of jalapenos, sprinkle chaat masala, green chutney, and lettuce. I repeat this after I put another slice of veggie patty on top of all of these ingredients. DELICIOUS!
