Apple Pie

1/2 cup unsalted butter

1/2 cup brown sugar

1/2 white sugar

2 tbsp all-purpose flour

1 tsp nutmeg

1 tsp cinnamon

1/4 cup water

8-9 medium size apples, peeled, cut and sliced

crust (which you can buy or make it home, give recipe in another post)

Start melting butter in a pan, once melted, add flour, stir until it’s a paste (about a minute). add both sugar and water and let it boil. add half of apples and add nutmeg and cinnamon. lay crust at the bottom of pie dish and add the other half of apples. pour the apples with the sauce on top of the apples in the dish. cover with another pie crust. close the ending and put few cuts at the top of the crust (so the air lets in/out for cooking). bake it in the oven at 425 for 15 minutes and at 350 for another 30 minutes.


Gajar (carrot) Halva

So, I brought some real (big) carrots since I stopped eating baby carrots (I got an email from my aunt that stated all these nasty things about baby carrots and I can’t eat them anymore). The plan was to buy the regular carrots and I would just cut them in pieces and bring them to work for snack. Well, this batch from Produce Junction turned out to be not so sweet. So, I ate few but couldn’t eat all. I looked up the recipe for a halva thinking that requires sugar and I can use these carrots.

I had to go buy condensed milk and then realize that I will not need any sugar, go figure! After working at it for almost 1.5 hours, this is what it came of it.

-approximately 20 sticks of long carrots, peel, wash, and shred in food processor
-one can of condensed milk
-2 cups of milk (either 2% or whole)
-about 3 tablespoon of cashew and almost power (blend it before shredding carrots in the food processor)
-about 2 tablespoon of Ghee (if not, use butter)
– few pieces of cashew for garnish

In a non-stick pan heat up 1 tablespoon of ghee or butter, add shredded carrots. Saute for 4-5 minutes at medium temperature. Add condensed milk with regular milk. Keep stirring at medium until milk dissipates into carrots. While stirring add cashew, almond powder. Once you think milk is most gone, add the other tablespoon of ghee. This way it won’t stick. While it is warm, take it out in a flat pan and garnish it with cashew.

If you have pistachios, feel free to add that as well along with cashew and almond.


I learned from my aunt that if you use cottage cheese instead of condensed milk, it will come out even better. Next time…
